Sucks for them, since they're missing a lot. Where I'm from feta cheese is extremely popular, its used on its own, on side dishes, main dishes, on salads, for breakfast, for desert, with fruit... basically, everywhere.

I lived in Japan and while cheese doesn't show up much (at all in traditional food, pizza and pasta have become pretty popular and prevalant so there is plenty of cheese to be had. In the grocery store too. But I also lived in Thailand and there was hardly any cheese to be found.

an entire continent?

Wiki with a chart listing lactose intolerance by group

Yep. This is the answer.

It's amazing how many people I talk to that don't know lactose intolerance depends heavily on race, and that Europeans are basically the only race with a low incidence of it in adulthood.

Interesting, very interesting.. Maybe I'm lactose intolerant since my parents where born in india.. Screw that, cheese is too yummy!

abundance of other spices and choices used for flavoring?

true... but mexican food is spicy, flavorful yet uses cheese.. i think there's must be another reason.

But when did they start using Cheese? before or after Westernization?

Mexicans have a higher rate of lactose intolerance since they are part Native American.

And the Mexican foods that have a lot of cheese are Americanized dishes sold in US restaurants.

True, Indians don't eat a lot of cheese. It only caught on after Burgers, Submarines & Pizzas became big here some time in the 90s. Before that, Grilled Chicken Sandwiches with Cheese weren't exactly a staple food item (even now, it is only in the big towns & cities).

This is largely the only type of cheese used in traditional Indian Cooking: Paneer
