Little known fact, but you really aren't supposed to eat anything with nitrates added while on atkins. I bet the bacon your neighbor eats has sodium nitrate in it.

Most people don't have a high enough good cholesterol (HDL) and too high of a bad cholesterol (LDL). People on a Low-carb diet tend to increase HDL and lower LDL. In general their cholestrol is higher but it's the good one (which scrubs the arteries), so I fail to see how his cholesterol going up is a bad thing. It's misleading information like that which makes me discount critics of low-carb. From everyone I have talked to that follows the plans correctly (that includes the excersize) not only do they lose weight but their critical indicators of health in their blood tests improve dramatically.
In his case, the LDLs did increase significantly. My point was that it probably had something to do with eating CRAP in massive quantities and not exercising. ;)

What is so inherently unhealthy about mayo? If you are on a high carb diet it's fat that you should avoid, but there is nothing wrong with it otherwise.

I know that a lot of people do get better cholesterol levels while on atkins, but a nurse emily works with was on it for several months and while she lost a lot of weight she had to stop it (and has since ballooned), because it was wreaking havoc on her cholesterol, and she's a competent nurse so she knows how to interpret the readings.
