The first movie had me crying from laughter for the entire movie. The second one had some funny moments, but overall wasn't exceptionally funny. The third one (to me) probably won't be funny at all.

Sweet. I didn't like the second one as much as the first but enjoyed it enough to want a third. The potential is still there for a masterpiece.

It doesn't even have to be related to a wedding, could just be a guy's trip. Octoberfest? Mardi Gras?

Well part 2 broke box office records, so a sequel makes sense. As long as the jokes are good who cares how many they make? There are 3 Friday movies and all of them are good. And every Police Academy is worth watching, well at least imho :D

Yup, fairly cheap movies to make and they rake in the money.

yep. Just look at the Saw movies. The first couple movies, according to what I've read, cost less than $5mil to make. When they rake in $30-50mil at the box office, and then add in disc sales, the only intelligent conclusion is to make more of them.
