Do they test for length, signal to noise, impedence, stuff like that?

No, It doesn't.

It looks like it'll do most of what you listed, but it doesn't do length, S/N, or impedence.

It's basically a continuity testor that will generate tone (so if you also buy a tone probe, you can locate wires/cables in the wall), and do continuity-related stuff. It looks like it'll do basic wire map (what pin on "this end" connects to which pin on "the other end").
