are these temps accurate?

ok, which temps are more accurate, I have a 1200 Mhz Thunderbird with a Swiftech MC462-A, this is not overclocked.

Asus PC Probe
------------------
CPU temp - 38 C
MB temp - 27 C

Digital Doc 5
----------------
CPU temp - 34.5 C
MB temp - 24.7 C

Have you tried checking temps in the BIOS? You might want to and then compair them to the figures below. Knowing PCProbe's reputation for accuracy, I would have to say that the DigiDoc5 temps are closer to accurate.

well, also knowing that external measurements like digital doc's don't read full die temp, but well under full die temps, the actual temp o fhte cpu DIE may be closer to the PCProbe measurement... not that the PCprobe is that accurate, though....

Are Bios temps the most accurate?

Bios temps are hte most "pure"... but they are often neither full load nor full idle, rahter an "in-between" reading. SO for comparison/checking purposes, they aren't that useful.
