While I like BFMV, I can't stand their Metallica covers b/c the singing sucks. Of course the guitars are great but it's not a good Metallica cover unless the singing is good IMO.
 
The Bangles (of all the bands...) found the guitar rock song hidden within Simon & Garfunkel's Hazy Shade of Winter.

Marshall Chapman's cover of Turn the Page is superior to Metallica's, though I don't think either of them surpasses Bob Seger's original.

If someone writes a song for another performer then later records the song himself, which one is the cover? In this case, I'm thinking of David Bowie, Iggy Pop, and China Girl...

No I don't think so. That cover song was on their album 2 years before the Miami Vice movie. They didn't make the song for the movie, somebody just decided to use the song for the movie.
