I'll say Enterprise. It wasn't great to begin with, got kinda worse, but then got really really good for it's last season. Unfortunately, the bell was already rung on the series by that point.
Changing out the doctor was almost a shark-jumping, but bringing her back seemed to actually help the show. And I cant think of too many TV series where they dump someone and bring them back later. Cool thing is Beverly Crusher made it all the way to the end and into the movies.
