I just started lifting weights again after a long hiatus and I want to make the most of it. I'm trying to put together a simple diet that will give me what I need for maximum muscle growth while not adding unnecessary fat. I'm thinking tuna is probably the best way to for the most part but I'm trying to figure out what else I need to add to my diet to keep making gains and trimming off fat.

What kind of supplements do you recommend?

I've noticed a lot of people who lift take flaxseed oil, whats the importance of it?

How many times a day should I eat to keep my metabolism high?

You need to basically load up on protein for growth ...

Hey there Arkitech, I'm sure once you get started you'll be hooked as I am.

As for supplements, I definitely advise you to get a decent quality Whey protein powder. I recommend Opimum Nutrition as it mixes well and tastes pretty good. Along with this I take a multi-vitamin and I've seen solid gains over the past year or so.

Try to eat 6 small meals per day. It is much, much better than eating 3 large meals like most people do. I usually snack on things such as tuna or peanut butter. Tuna and rice is a great meal. 😉

I've been thinking of trying to make tuna a large part of my meals for a few weeks. I need to burn off a lot of fat but I don't want to sacrifice muscle gains right now, I figure the more muscle I have the faster I'll burn off the fat. So I guess if I get a lot of good protein, keep the carbs to a mininum I should be ok.
 
It's hard to add muscle without adding some fat - unless you have a particular body type, it's very hard if not impossible.

Regarding tuna - excellent source of protein and some nutrients not found in other stuff - just don't eat too too much of it:

I've cut it back down to about 3-4 cans a week. In terms of supplements - I'm sticking to just protein powder. Just make sure you get enough to eat - eating protein isn't enough - I used tons of it but never got bigger - you have to make sure you intake enough calories, fat, carbs, etc. I'm at 3500 calories a day + 150% of my body weight in protein (gm). I prefer not to take supplements for various reasons, some unfounded, but creatine and glutamine are good to take for building muscle.
