Hey guys

I've heard about how well AS5 is supposed to work... but my question is would it be worth getting some to replace the Shin Etsu I have on my CPU currently? Would I notice any marked improvements in temps?

I have an Athlon64 3200+ (Newcastle @ stock speed) with a Gigabyte 3D Cooler Pro.

All things being equal (i.e., all applied properely)- No.

Is Shin Etsu the what comes with the A64 stock heat sink? I thought it was a pad. Is it already on there or do you squeeze it on yourself? And does it void the warranty to use something else?

It indeed uses a pad... and yes it voids the warranty if you use second party heatsink material as far as I am concerned.
