Because the iRiver's extra features don't matter to 99% of the people 99% of the time, and would just add extra size to a player that caught on because it hit that magic capacity/size equation. How many people are realistically going to use thier music player to record sound? How about the fact that digital output isn't going to make any difference when you're listening with headphones, as you'll be doing with the iPod?
Things that Apple can do with the iPod that the iRiver can not:
1) come up with their own naming scheme

2) use smart playlists
3) play songs from the iTMS, the best music store available.
Sure there are other music stores, but either they don't have the selection that iTMS does or they use WMA with its inconsistent, butt pirate restrictions on use.
To the guy who wants a sub $200 iPod...don't hold your breath for a new one. Try to get a refurb or a used one from somebody who's upgrading. Or hold out and hope that the HPods (HP branded iPods) have a cheaper, lower capacity verison.
