I'm looking to install a wifi service for my hotel. The hotel has 3 floors and 36 guest rooms. There are cat5 runs to several of the rooms but not all. There are no drop ceilings so I really want to cut into the drywall as little as possible.

Anyone have any ideas? Are there products that will allow me to use the cat5 runs to spread out the wifi, but not take up all the cat5 jacks? How would I go about mounting a device without it sticking out or looking unprofessional?

That would work - looks pretty cool, and the APs are cheaper than what we have at work.

Looks like it uses nonstandard PoE though (datasheets talk about adapters to make normal PoE switches work right).

So make sure you follow the directions or you could fry something.

Yup, I'd recommend the Unifi units, my buddy is using them and is very happy. You can set up multiple SSID's for separate networks and do basic bandwidth limiting.
It only requires a free software server (can be run on an existing computer and doesn't need to be on 24/7). I also has built in billing software specifically for hotels (But i'm a huge fan of free wifi, hint hint - great selling point feature).

We just got quoted for $33,000 (a 50% discount.. list is $64,000 apparently) for a Cisco setup that would be at tad bigger than the setup you want. And that requires 2 controller servers (not sure why we were quoted for 2).. But we could get the same, or better coverage for about $2,500 with Unifi.

I have and use Unifi. Great stuff and can't say enough good things about it.
