How long did it take for you to become good?
Any recommendations on books I should look at?
Supplies?

I'm looking to make sushi.. I want to be good at it too. :D

I've made it a few times and i can make pretty decent rolls... it's pretty fun, you should try it. Make sure you get the correct kind of rice and bamboo to shape the rolls.

Good question, I'm up for making this too. My main question is, where to get the fish? (Or eel... mmm)

It's best if you can get live ones and have them cut it up.
I wouldn't use any store bought ones.

You can purchase smoked eel at any fish market. Eel isn't raw :p

around here in LA, there are several japanese markets that sell sushi quality fresh fish. HotChic, they sell the eel prepared in that style there too. I was very surprised but I found some very fresh tuna steaks at Costco some weeks back which turned out superb as a poke salad and seared. both are delicious ways to eat tuna, if you don't want to do sushi.

I've seen tuna steaks at Costco lately (maybe I just never noticed them before) but the quantities or so large.. I'd hate to waste good tuna if I couldn't finish it all. :(

I just picked up this book called "Sushi - Taste and Technique" and it's awesome. Color pictures everywhere, goes over a lot of the ingredients, etc! Now to head over to 99 Ranch after work and pick up supplies.

well, the rice isn't that important, but make sure you get the TASTE of the rice right. its just white rice w/ some rice wine vinegar in it.

as for the fish, not too hard, but make sure if you freeze the fish that you thaw the fish right, sometmes it comes out bad.

I've done rolls and cooked shrimp. Just get yourself a cookbook on sushi.

I wish I could find a local market that sold Sushi Fresh fish. There was a thread in Hot Deals awhile back that had a link to a mail-order seller.

Took a sushi making course in Japan.

Here's a tip.

When making sushi, have a bowl of ice water nearby. You need to have your hands ice cold or else the rice sticks to your hands.

And contrary to what some people have said, rice is the most ingredient in sushi.

All real sushi chefs in Japan know that for real sushi, you must use sasanishiki rice.

Mostly tuna. Last time I went tuna fishing, we cut up a yellowfin on the deck and had it with rice. I think it's illegal to clean a tuna onboard, but our captain didn't seem to care.

Grocery store down the street from me sells sashimi-grade tuna, I've made spicy tuna handrolls a couple of times with it. Not as good as fresh caught, though.
