Anyone know the shelf life of an unopened jar of fluff?

Open it and smell it. If it smells all right and is not growing mold you are fine.

Fluff's useful age varies from six months to one year, depending upon the storage temperature. Cooler temperature means a longer life.

You will know when it goes bad. It starts to turn yellow and it separates with a goldish-brownish liquid at the bottom. I have seen it happen. In fact, my fiancee has a jar of Kraft Marshmallow creme in her pantry that is beginning to change. It isn't very far along but I will take pics and post if anyone is interested in seeing.
