Anyone know how what goes into making a sausage?

I've heard that its kinda gross but I've been to scared to ask til now.

So what goes into making the following sausages:

polish
breakfast links
breakfast patties
hot links
hot dogs
turkey links

Just a guess but... I'd imagine they grind up various animal (and/or human) parts and pump it into some sort of thin dermis tube, and viola! we have sausage :)

The rest is just spices such as garlic powder, salt, pepper, etc.

If you knew, you'd never eat another sausage in your life. Best not to know (or even think about) what they've ground up.

You asked the right guy :). I worked in a meat packaging factory for 4 years (then became a sys admin, go figure :p)

I worked in chopping for a few weeks and spent mucho time making the smokie "mixture". If I recall correctly the recipe is the following :


15lb low grade pork
20lb emulsified skin
20lb shredded beef heart
(that was a fun job, I got covered in blood and looked very scary :p)
15-20lb rework (rework is stuff that falls on the floor in the packaging area)
+spices


Rework is actually fine... stuff that falls near drains and dirty areas got sent to tank where it became dog/cat food.
Most rework is actually pieces that don't look as good, or can't be sliced properly because of their shape.

God I miss those cryovac/tiromat days :).

Hehe, just to let y'all know... Farmers sausage contains rum, and wine salami actually does contain wine :).

and yes, I still eat all that stuff :) mmm I miss eating the wine&cheese salami :)

my parents used to make kielbasa when i was a kid. It was better than any i have ever tasted. They used normal meat and spices. The casings were pig intestine and they had a small meat grinder to do this all with.

I guess it is harder to make blood sausages. Perhaps It's like making water baloons. You put the skin sac thingy on the blood faucet and fill it up.

Watch eating a lot of some sausages..............especially some "Summer Sausage" & "Deer or Venison Sausage".............both of those usually have salt peter in the ingredients and, well, salt peter, or at least enough of it will give you a "limp"...........and it will have nothing to do with you legs............;)

There's an old saying: People who love sausage and respect the law should never watch either one being made.

But really, what they put in sausage is the stuff that wasn't good enough for hot dogs.

Actually it's the other way around, what wasn't good enough for sausage goes into hot dogs and balonga(sp?).
I remember seeing a movie, bad boys maybe, where he is eating his balonga sandwich and she starts telling him the things that are in it. :p
