Any audio recording program will allow you to capture as much audio as your hard drive and operating system will allow. I say operating system because IIRC any of the FAT-derived file systems have a 2-gig file size limit.
Now, standard CD-quality WAV files shouldn't get too close to that 2-gig barrier if there indeed is one.
As far as editing those WAV files to tracks, anything like Cool Edit or Gold Wave would do the job for you there.
