In my experience, it is a matter of what my devices output.
I have never had any noticeable issues with jitter using toslink in my setup, but I doubt that my setup is high enough fidelity in order to really notice the issue to begin with.
Most of my devices only output spdif over a toslink connection (xbox, ps2, media pc motherboard), so I do not have a terrible amount of choice in how I connect my devices.
If anything, I would prefer to use coaxial since it would be much cheaper to run a composite video cable for my audio than optical.

It may very well make a difference, but I don't think this is something significant enough that people should really be worrying about it.
