Anyone have Celiac's or a wheat allergy?

Found out I have a wheat (gluten) intolerance a few weeks ago. Makes loads of difference in my energy level by avoiding foods with gluten in it (bread, oatmeal, fried chicken, etc.). It's kind of tough living wheat-free but I feel so much better that it doesn't matter. Anyone else have this? I'm looking for some good recipies and tips and whatnot.

A guy I know is allergic to gluten. His food smells like rotten garbage. That, and he's had it since he was a kid, so he pretty much couldn't eat anything, so even though he's 22, he looks like he's 12.

I think one of my friends is allergic to wheat, but didn't found out until college was almost over. He stopped drinking beer and I think his skin problems went away.

What's nice is that there's been significant advances in healthfood since I was a kid 🙂 Most of the gluten-free foods I've bought so far have been pretty decent (paste = brown rice instead of flour, that sort of thing).

My sister's husband has Ciliac's disease. They've done a pretty good job of finding gluten-free substitutes for most things. He really misses his  though.

Oatmeal doesn't have gluten in it unless you get cheap oatmeal that's heavily contaminated from wheat/rye products in a mill.

From Quaker's website:

Do oats contain gluten?
Oats are grown, stored, transported and milled with wheat, rye and barley, among other grains. USDA grain standards allow a certain percentage of other grains to be present in the oats. Therefore, gluten may be found in oats, if these other grains are present.

I always thought I was doing myself a favor by eating oatmeal :Q

That's what's funny, I live a pretty clean life. I don't drink alcohol or even caffeine for that matter, and I stay away from smoking and drugs. I miss cookies already though 🙁

Edit: I had some surgeries when I was a kid and I always assumed my low energy was a long-term result of that.

That's because Quaker oats are cheap. McCann's Irish Oats are milled in a factory that only processes oats. Of course, I'm not a celiac and I get steel cut oats from a bulk bin at the grocery store, but try some McCann's. Might work for you.

You can get gluten-free cookies if you have a halfway decent supermarket or health food store around. Like I said, he's been able to find gluten-free replacements for quite a few things.

Hey, that's cool, thanks for the tip  As much fun as eating salmon and sweet potatoes for breakfast has been...

Yeah, I've found two good cookie substitutes actually. Most are nasty, but I found some wanna-be Oreos that have a weird aftertaste and some chocolate-chip cookies that aren't too bad (like Chips Ahoy). I'm a major sweettooth, so at least having alternatives is good 🙂

Would this show up on a traditional allergy test? The one where they prick your back and test for an allergic reaction?

Nope! I actually had a full-on allergy test last year before I got married (like 20 pricks in each arm). An allergy is when you have like an immediate and violent reaction, like you throw up or get hives or have to go the hospital. An intolerance is much more subtle and you get things like mild headaches, stomaches, low energy, and tiredness, things you'd attribute to other things like staying up to late or eating crappy.

If you think you have it just lay off wheat stuff for a few days and see how you feel. That will tell you right off the bat.

I bought gluten free Newman-Os once.. they tasted terrible.

Yup, those are the Oreos I'm talking about, the ones with the weird aftertaste. Trust me dude, after two weeks anything like that starts tasting good 😛

Yeah I've been diagnosed with IBD.. a year or two later IBS.. missed about a month of school in 10th grade if I recall right... and I'm lethargic and have a lot of trouble paying attention but it's totally random, as well as the stomach/intestinal discomfort.

I'm even diagnosed with osteoperosis and on my last dentist visit they said something about the enamel being naturally prone to deterioration. :Q

This is almost uncanny. I've had biopsys taken but I believe they were only tested for polyps... I'll have to check. A diet sounds like a great idea regardless.

Yeah I was sick allll the time in grade school, always attributed to a chemical imbalance as a result of my surgeries as a kid. Lethargic is a good word to describe it 🙂 I feel so much better now. My Dad and I are working on a rotating gluten-free diet; I will post it on my website when we're finished if you're interested. Try going off wheat/gluten for a week or two and see how you feel...made me "normal", which for me is like being Superman 😀

Oh and I came across this interesting link this evening:

They mention eating foods like salmon and roasted chicken, which is what I've been doing...has helped tremendously. I'm going to have to give this a good reading later tonight...

Thanks! I'll definitely check it out. 🙂

I have Celiac Disease, found out about it a year ago and I suffered from symptoms of the disease for at least 15 years until finding out what the @#&$ was wrong with me. Unfortunately, the medical community used to think of celiac disease as a rare childhood disorder but it can (like in my case) spring up during adolescence/adulthood. But what a relief to finally get a correct diagnosis.

Oats are generally considered a no-no because of contamination. Quaker definitely no, McCann's is a possibility, but if you want to be safe you can buy Gluten Free Oats.

Beer is off-limits because barley contains gluten but "they" are making beer now out of sorghum/milo grain. Available in some parts of the country. Distilled spirits are generally OK even if made from gluten-based grains. Scotch whiskey is supposed to be fine because the distillation process removes the harmful proteins. Drink wine!

Rice pasta is perfectly fine as a substitute for semolina pasta, the Tinyada brand is my favorite.

Get a breadmaker if you want to consume bread as close to the "real thing" as possible. The shrinkwrapped gluten-free breads found in health stores/Whole Foods/Wild Oats Markets are typically anemic and gummy.

Learn to cook. I am always baking, a male Martha Stewart. It's pretty easy to bake a few dozen cookies, stick them in the freezer and bring a few out at a time. Scones, biscotti, muffins, cornbread, brownies, I've done all these things with gluten-free flours. Look for books by Bette Hagman if you want some recipes.
