I'm wondering if I cancel my subscription, can I still listen to the books I've purchased with my credits?
 
Yes you can keep your books. I love audible, it makes my work commute much more enjoyable. I don't listen to the radio anymore.
 
I am constantly re-upping and cancelling my audible account, they often give discounts to convince you to stay on. I always find that when I have the account I end up with spare tokens and too many books because of discount deals so I occasionally stock up and cancel for a month or two.
