a google search netted me this registry hack:

Get hacking

Remember, this only works if you have Outlook XP (not Outlook Express). If you are missing the registry key below, this tip will not work for you. Always remember to backup your registry before you mess with it.

Open Regedit.
Go to HKEY_CURRENT_USER\Software\Microsoft\Office\10.0\Outlook\Preferences
Add a new DWORD value and name it MinToTray
Set it equal to 1.
Restart Outlook, it should now minimize to the tray.

Comments about this Tip or have a Tip you'd like to share? Let me know in the Talkback section below.

TrayIT will work with any OS (close to zero system resources and VERY well written)... do a search for it here on Anand-forums... i got it from a link from here...

You just right click on any "shut-X" icon and it will minimize to tray...

I use it, if you cannot find it anywhere else, my AIM and my E-Mail is in my profile... :)

Cool! This actually works great. Now it doesn't hog as much space on the taskbar.
Thank you even if I wasn't the one asking in the first place. :)
