Find out from your fellow workers who the regulars are. Do NOT piss them off, because if they've been going to the restaurant for the past 1-4 years, chances are that they're pretty good friends with the manager/boss. This is especially true if it's a smaller place.
Take the good with the bad. So what if people only leave you 8-10% on one check. Why? Because there sure as hell is gonna be a time when someone leaves you a nice fat 25-35% tip.
Even if the people suck, still try to do your best for them. You don't know what's going on in their personal life, and they came to your restaurant because they want a nice relaxing meal. Possibly go the extra mile for these people, because if they see how nice you are and how well you treat them, they could tell the owner and thats a plus for you.
Be wary of pooling tips. In my restaurant we have a choice to do so. Why should I shell out the money I earned by going above and beyond for my tables for some hack who does a half-assed job on his.
Do not let customers take advantage of you. If you do it once for them, customers will expect it over and over again.
Also, in terms of actual work you do.
Sometimes it will be absolutely dead. This is why you should never bank on tips for bills or future purchases. Wait until you actually have the money in your hand.
Sometimes you will be in hell. Sometimes it will be so busy you won't know what the fvck to do. The best thing to do in this situation is take a deep breath and keep a clear head. Try not to get flustered. If you really need help, ask one of the other people there. If they refuse, fvck em and next time they need help, laugh at em.
Remember to put things into the computer ASAP. Do not forget about drinks, especially alcohol. If a person has 4 glasses of wine. Thats 10-15% off fo about $20 your losing right there. Trust me it adds up.
