Think I'll go w/ the usual:

1 CA roll
2 Maguro
1 Toro
1 Unagi
1 Spider Roll

Oh, and a cucumber roll for the wife, that's the closest she'll get to the stuff.

Whoa, you are going to eat an entire bull? (toro)

What kind of spiders are in a spider roll?

Seriously though, I've tried sushi and cannot get over the nasty texture. It was like chewing a rubber band and made me want to puke.

What about something other than sashimi, like a california roll

I wouldn't know what a california roll is, let alone ask for one.

You can ask your seafood guy for Sushi quality fish.
All fish has been frozen that you buy with very few exceptions.
Try searing tuna next, that stuffs good.
Halibut cheeks are really good.

Back I use to go to a sushi place that gets fresh fish everyday. The only day they're closed is on Monday because fish doesn't come in that day. That was some quality goods, albeit a little steep.

You live in believue so it is possible if they were local fisherman, if the fish were from Alaska, nope.

Yeah i dont expect them to helo drop fresh fish from alaska. but theres a good selection from the washington coast.

We have great prawns too!

Man i miss the asian cuisine in washington. East coast south is booooo

I like Sushiland.

Oh wow! Great replies here folks.
What I had in mind was just the plain and simple sashimi. So good and it looks so simple.

Charlottesville (VA) is not far from the coast so there should be good fish available.

California roll is very basic and non threatening. Its cucumber, avocado, imitation crab meat. Theres nothing strange or foreign...atleast i hope not.

dont make it at home
it will never taste the same,
I used to be a sushi cheif and I wouldn't even try to make it at home
I tried once just using the stuff I could find at local grocery, but man, it was really bad.
Like someone already said, if you want to taste just like in a resturant then it's going to be super hassle to prepare.
as for a fish, everything is frozen. you can make sashimi with live fish but that's different.

Thank you.
I'll continue to buy it then. It just looks so easy to do.

Don't give up, man!

How to make a roll.
How to make nigiri
and another way
This one looks to be the best instructions for everything.
Things to remember about nigiri:
* The fish is supposed to be chilled.
* Don't hold fish in your hand for too long because it will absorb the heat from your hand.
* The finished piece should have an arch to it and hang over the rice on all four sides.
* A sushi expert can make more than 12 pieces in a minute.
* It only takes a sushi chef 10 years to master this.

hah yeah one of my friends that I always used to get sushi with (he and I and another friend used to go at least once a week and get like $50 each, more often than that and it got a little out of hand heh) anyways he would always get like a bunch of california rolls, philladelphia rolls etc, and finally one day we're like dude wtf, get something with fish in it, so he got a sampler plate was nigiri, he took one bite and couldn't even swallow it, said the texture was too weird, and he'd been going with us for sushi for 2 years!

To make unagi sushi,

buy sealed frozen teriyaki unagi from asian market. heat in toaster oven.
smear with "special glaze".

Special glaze is made with (bonito flake & kelp) soup stock, add soy sauce for colour, then mirin and brown suger for that flavor and sweet taste. reduced until it is very thick.
