Any rules/guidelines for follow up emails after an interview?

I had my second interview yesterday for an IS position with a medium sized company. I feel *faily* confident about being chosen for the position, but felt like they had some concern that I was overqualified for the job and would become bored quickly with it. I had some administration and network responsibilities in my previous position, and this one explicity prohibits the help desk staff from accessing servers/network equipment. I get this feeling that they are hesitant to hire me on to a "lower" spot. Turnover in the Admin spots only comes around every 2-4 years.

I worked 5 years in a similar position, and the office cultures were fairly parallel. Similar sized offices, remote offices spread across the U.S., required to build relationships with the managers at branch locations, ect. Just a very good matchup to what I've done and what I prefer.

Should I send an email to my interviewers telling them thank you for the interview and that I'm very excited about the opportunity? And should I also express that it's a position that I'd be comfortable in the position until an Admin role opens up?

I haven't had a 2nd interview for a job I was actually serious about for over 5 years now. I'm kind of out of the loop on what the proper code of conduct is on follow up emails/letters.

A thank you email is always appropriate. It's another opportunity to restate your strengths, and interest in the position, and it's just good manners.

Be careful with the phrasing, I'm not sure "I'd be happy in this position, until the better one opens up" is a good idea. Just focus on the the offered position, and your interest in the company.

its not a first interview, its a second. By the time a "real" letter gets there possiblity they will already have had a vote and chosen whoever. Email is good for second interview, so long as the first one was followed up properly with a real letter.

email is appropriate nowadays for a thank you, especially for a tech job.

I'm not even sure I check my 'paper' mailbox anymore, it's usually just junk mail that sits there for a month. Everybody works via email.

yup. by the time they actually do check their physical mail, they will have already hired someone.
