What resolution do you game at? Unless you have a huge monitor, there will be no difference between 512 and 1GB.

H264 decode won't be a problem on any of the last few generations, but on a 3007 a 1GB version would be the way to go. Depending on the price of the 1GB version, you might even consider a 4870X2 instead as it really shines at 2560x1600.
Here's a review from
Hardspell of the 1GB PowerColor 4870. Keep in mind however they are CPU bottlenecked using a 2.66GHz C2Q which isn't enough to show separation between the parts in most games, even at high resolutions with AA. The only bench I saw that stuck out was Crysis, where the 1GB was 2x the performance. I'm going to guess they changed the texture setting from High to Very High or something.
