Just about any GPS receiver will work. They make ones that connect to the laptop with a USB, serial, or Bluetooth interface. However, I really don't suggest using a laptop. The interface in laptop mapping software isn't made for car use, and it's very distracting for the driver. Laptops have a limited battery life compared to smaller GPS units. If you power your laptop with a power inverter + power brick, you get a big tangle of wires.

You can get a car GPS unit for $300 these days with maps and navigation built in. Not worth it to spend $100-150 for a GPS receiver and mapping software for a laptop.
