Any classic, authentic vietnamese dishes that I have to try?

By classic I mean something akin to bulgogi for Korean, sushi for Japanese, and tandoori chicken for indian.
 
Try their Bun (pronounced 'boon').

It's a soupless noodle dish with white vermecilli, fresh veggies, meat of your chioce and fish sauce.

That + Pho = you're pretty golden for knowing viet cuisine, at least better than 99% of US population.

OP, try banh mi <french style bread with good stuffs in the midle>, cha luo <cooked pork/chicken>, com tam <broken rice with meat and veggies>....then thic kho <pork simmered in caramel sauce>...beef stew..then shrimp and pork on sugar cane, omelette with pork...shall I go on?

Then spring rolls <much much better than american styled fried egg roll>.

And of course, pho, you have to practice and practice to make good pho
 
Thanks for the recommendations. I just don't want to get to a restaurant and order the equivalent of something like Sweet and Sour chicken. BTW, what would be the equivalent of Sweet and Sour, like a very Americanized dish?

bun cha gio would be the closest thing I guess...can't really fuck that one up: vermicelli noodles with egg rolls & fish sauce

you're not gonna find it in Ohio, but com tam tau hu ky thit nuong bi cha would be the best thing you could get =P

broken jasmine rice, fried shrimp cake, some funky pork stuff, and some funky pork "meat loaf"

it really depends on what kind of vietnamese place you're going to: a pho place, a rice place, a restaurant, etc....
 
theres really no such thing as americanized vietnamese food (like there is americanized chinese food)... so order anything and you'll pretty much be getting the "real thing"... quality of course varies from restaurant to restaurant

we've got americanized vietnamese in houston.
 
along with what everyone said above...nem nuong. basically anything that involves grilled meat. my mom also makes this yellow stuff...you pour it into a frying pan and throw some veggies in with some shrimp. it kinda comes out like a pancake...thats good stuff, but i have no idea what its called.

IIRC, it is called banh xeo...you eat it with fish sauce and red pepper sauce...very yummy.

It's called "Bánh xèo". It usually has bean sprouts, shrimps, and pork inside. It goes well with veggies and fish sauce.
 
Ah thanks...that is some good stuff. Never ordered it at a restaurant though. My parents usually put all the fixins in theirs, but I usually just make mine with shrimp and onions.

I think in Vietnam most pho is not served with meat and no spices in the north (sirachi or hoisin sauce).

Try balut here. 🙂

i havent eaten in the north, but in the south, when meat (flank, fatty, etc steaks) are unavailable, the substitutes are either meatballs (which dont actually taste meaty at all) or chicken pieces. i havent seen plain broth & noodle soup... must be for the really really poor regions

i like the way information used to be passed down in the olden days, like 1996.

in Mira Mesa, part of the San Diego suburbs, there's an area where there's
a lot of Vietnamese people. i have a friend there that runs a machine shop
in his garage, he's from North Vietnam.

the place he goes to, that i started going to, serves basil and some kind
of sprouts as an appetizer.

then, they're big on soups.

similar to a place i went to near San Jose State, more soup.

mo mong's on montrose near westheimer, to start. vietnam coast on fondren near harwin (though the sandwiches are awesome), le viet on westheimer near wilcrest. those three places have gone beyond the typical anglo'd vietnamese stuff (which is really just putting a bunch of chinese glop on the menu). it's vietnamese food for anglo palettes.
 
MMMM Cambodian food seems very similar to Vietnamese food. I'm Cambodian and have always ate food that people consider Vietnamese. That border between countries doesn't hold up too well I guess.

Beef lettuce wraps are good. You get some type of leaf lettuce served with pieces of beef/chicken and other herbs/veggies then wrap them together with some wet rice noodles. It's also served with fish sauce to dip in. I like to add chili's and peanuts to the fish sauce.

uh... EFF Vietnam Coast.. costs farrrr too much for a vietnamese sandwich and the bread isnt even the same. too bad it was the only close place to my old work place
