Another VM appliance question: encryption

When installing Linux Mint I have the option to encrypt the partitions. This is also the case if I am installing LM18 as a VM. If the VM is encrypted can the appliance be moved to a new host without issue or are there certain obstacles I need to be aware of? I haven't tried it yet but I wondered about it.

The last thing I wanted to do was to install a LM18 VM that was encrypted and then try to remove or move it and run into an issue because of partition encryption.

Well...the host machine needs to have the encryption enabled, if you want a more secure environment.
That said, yes, you can do what you are looking to do, which will prompt you for a master password at boot.
