12:30 AM: Into the brine
2 AM: out of the brine
2:20 AM: into the 450 degree oven with some veggies

flavored with fresh thyme, garden fresh rosemary, and fresh ground cumin.

i expect yumminess, as long as I don't overcook it (I don't have a thermometer)

Nah. Try working graveyard for 12 years...11pm - 7am. That whole "It's too early for [various foods]" crap goes right out the window. I usually eat supper @ 9-10pm so I'm not hungry at work, and when I get @ 7:30 or so, I'll throw some hot dogs or a burger on the grill.

And yes, you are a weirdo...but we have more fun anyway...so no worries. :D

oh christ so good SO GOOD

crispy skin, perfectly cooked interior, juicy as hell, rosemary flavor infused throughout. the only significant flaw I noticed is that I did not flip the chicken, so one side is crisp, golden brown and delicious, and the other side is a pale soggy fatty mess.
