I've decided I'm going to make a pecan pie tomorrow. I may finally try my hand at salmon too. Anyone have any dead-easy recipes? I'm thinking about getting a small countertop toaster oven or something to make small portions like that.
Dead easy salmon?

Make sure the skin is on and scaled. Season the flesh with salt and lemon pepper. Heat a skillet (not nonstick!) over medium high heat. Add your cooking fat of choice. Lay the salmon in the skillet, skin side up. Cook for about 2 minutes. Flip and cook on the other side about 4 minutes or until desired doneness. Serve skin side up to keep it crispy.

Thanks. I need to get some non-stick pans. I ordered a knife on Amazon today. I still have all of the cookware I bought at Walmart when I was 18. It's probably time to upgrade and start cooking more.

Had two cordon bleu's (I don't eat turkey), stuffing, corn, scottsdale potatoes, biscuits, cranberries, and Hershey pie for desert. My mom couldn't make the pumpkin pies since the store neglected to give her the canned pumpkin she bought.

Well you can take solace in the fact that the pumpkin they forgot to bag likely wasn't pumpkin since the term "pumpkin" is controlled as a genus and not as various species so often canneries use creamy squash like butternut or Hubbard and label it as pumpkin.

I didn't take pictures, but the bison asses were pretty good. Finished product was salty with dark fruit flavors; almost like a steak sauce. Other stuff was a clusterfuck as predicted, but it mostly turned out. The Muslim wasn't a Muslim after all. Just another Jamaican that doesn't eat pork :^D

Had a good time, and drank too much. I was tired anyway, and the alcohol kicked my ass. After the kids left, I passed out til 11:30. Left the stuffed figs at my mother's house. I kinda wanted them, and my mother won't eat them :^/

I can't eat another bite. I decided to save the oysters for tomorrow. Going to be another big day of food. Beef short ribs, NY strip, brisket point, and oysters.

Haha! I was going to go hardcore, but I've been stuck on the road a lot with work lately, so I kept it pretty simple. I was really excited to try this "ultimate" green bean casserole recipe:

Instead I went with this simple off-the-shelf recipe, only took a minute to stir together (literally), still pretty decent:

I did try the "funeral potatoes" tho, they were pretty good. I added a lot more cubed hash browns though, and next time I would use an extra cup of cornflakes because the crispy topping was awesome:

I made these sweet Hawaiian rolls for a client potluck the other day & had a few left over so I use them:

I wasn't too sure about the recipe initially - 1.5 cups of pineapple juice, plus they came out with a texture more like a sticky bun than a dinner roll - but once they cooled down, they were actually really great. I also made whipped butter using milk this time instead of oil - just use two sticks of room-temp butter, a quarter cup of milk, and add Kosher salt to taste, and mix for 5 minutes or so with an electric hand blender, and boom - restaurant-style soft & fluffy butter. Really took the dinner rolls to the next level.

I lucked out because they had fresh turkeys at the grocery store, and my little one was $12 out the door. A much better deal than two double Whoppers :D

Adding those hawaiian sweet rolls to my bookmarks. I may have to give them a go sometime if I can convince myself to get a kitchenaid mixer.

I like her tip not to add flour to keep the rolls softer too. I was adding flour to my king cake dough as I was kneeding it to make it easier but maybe that's where I went wrong.
