socket-7, no problem. SIMM capable? Good luck finding one.
About the last all-in-one made that could still use SIMMs was the PC-Chips M571. SiS 5598 chipset, C-Media 8330 ISA audio, 4 PCI, 3 ISA slots, 2 DIMM, 4 SIMM.
Note that the later M571LMR does not have SIMM slots anymore. That one's DIMM-only just as any later stuff.
My advice: Sell those SIMMs to someone who wants to upgrade his old box, and get yourself a DIMM for that money. SDRAM's very cheap at the moment. And then use a more recent board, like the M598LMR. That'll give you the newer SiS 530 chipset, 10/100 LAN, PCI 4-channel sound, and modem.
