Adobe Premiere Pro hardware help

I recently built a computer for my girlfriend who wants to do video editing and I need some help with hard drive configuration. This is what I have:

Dual Xeon 3.2 GHz
Supermicro X6DAT-G motherboard
2 GB Kingston PC-2700 ECC RAM
2 x 74 GB Western Digital Raptor
2 x 300 GB Seagate 7200.8 SATA

I'm using the Raptors in a RAID 0 configuration for the C drive, but I'm unsure how to set up the extra drives. I was originally thinking to put the Seagates in a RAID 0 configuration. This would be nice but at the same time, if one drive fails, I don't want to loose all of that data. Speed isn't that big of a concern but data integrity is (not enough for RAID 1 or 5). Can I just leave it as 2 separate drives or is it better for Adobe to just have 1 (as a scratch drive)?

Just leave it as 2 seperate drives and you should be fine, just make sure to keep important stuff on both 300gb drives and/or CD/DVD
