My keyboard has a volume dial, but it goes in pretty big increments. If I go into the volume applet, I can go in much smaller increments using the up and down arrows. Is there any way to get the volume dial to go in smaller increments?

Does your keyboard have a control panel applet that allows you to customize how the buttons work?

I have a Logitech keyboard but the iTouch software doesn't seem to let me adjust the increments.

there's a free soft called soundcontrol, it probably can't use your dial but can control the volume via keyboard for example:
winkey + up (or down)

if that's not good enough why not email the makers of your keyboard/software and ask them for a change. You are the customer after all, and that would probably be very easy for them to implement.
you might also look into "hacking" the registry or the ini files for this, but not using this keybaord/soft you'll have to try that on your own
