I have a p3 450 I'm currently using as a file server. It's a slot 1 cpu, so there's noisy little (maybe 30mm) fan that's built into the side. Is there a way to remove the cover/stock fan, w/out killing the rest of the cpu... possibly keeping the shell intact so that I can restore it later on for historical purposes?

yea you can take it off, there is either a couple of screws that will release the hsf, or there is a metal clip, that you have to push in a direction (cant remember) from there the hsf, will come off, if its one of the stock intel hsf's i dont know how to get that off, maybe you just take the cover off from around the fan and then unscrew it. hope this is helpful

update: the p3 450 is actually just a snap out for the fan itself (the heatsink looks a little more complicated to remove). Interestingly, I discovered my p3 450 was so quiet for the last 1.5yrs because the fan connection wasn't working... lol. Never had any stability issues though. Anyway, I took the fan/plastic thing off and put it into my case w/a 4" pvc pipe ported directly to it. It's been running passive for the last 2 days and is only moderately warm to the touch. good deal!
