How active is the black (gray?) market for bypassing the governors on newer bikes? Without doing any research at all, I'd guess quite a few buyers of the high end performance bikes immediately get rid of them.

It's not a black market at all or even a law. The reason they have them is the European's (big European leaders) told the big Japanese motorcycle manufacturers that if they wanted to sell the bikes in Europe they would have to restrict the top speed to 300kph(186mph) top speed. So they install the governors on all bikes. Bypasses are easily available legally.
