A meat lover that gardens.

I'm a big fan of meat; beef, chicken, pork, venison, etc. But damn if the best part of my meal last night wasn't the big juicy red tomato that I picked, along with the sweet corn that sacrificed it's life for me to enjoy that evening. What with the days getting shorter fast and the fresh produce soon to be a distant memory, I feel sad already when I go out in the evening and pluck the ripe sun sugar tomatoes right off the plant and eat them as I know they will soon be gone.

In just a few months we will be able to enjoy some waxy, hard, sort of red Roma tomatoes picked in some other country and shipped here. I wish I could learn to can stuff...

The TX sun and heat murdered our garden. Except for the Cantaloupes which I did not expect to thrive. Oh well, the garden was just to provide ingredients for salsa anyway we don't really eat vegetables.
 
Canning stuff basically requires cooking it. Freezing your fresh vegetables might work better.
Yep blanching your veggies is way better than canning them IMO. We can a lot of stuff but certain veggies like corn, beans, peas, ect are better blanched.

Yeah it was pretty bad here in Central Illinois to. The fungus are ripping through our melons, tomatoes, and cucumbers.....sigh....

Dunno how much you care, but for the sake of discussion, I wonder if you could hang netting over the garden to take some force out of the sun?
 
Tonight I picked a bunch of sun sugar tomatoes, they are the best. We will have sugar baby watermelon by the weekend, acorn squash is coming hot and heavy, and I'm sick of zucchini and yellow squash already. The sweet corn is really good this year, and I'll have other squash coming later. My peppers got taken out by rabbits this year, but they were not doing well anyway. We can grow about anything on a vine in our soil others things get tricky.

with fresh veggies like tomatoes, onions, celery, green peppers, garlic and spices you can make an excellent chili sauce that you can put into plastic containers and freeze for when needed. It is basically a tomato relish condiment that goes great with other food.

With fresh strawberries in the spring, you can make freezer jam.
