Do NOT use regular Lime Juice - it does not have the same taste and flavor as Key Lime.

There is a recipie on the bottle of Nellie & Joe's Key Lime Juice, but my contribution is superior.

Sounds great, and BTW, I use the egg whites to make meringue cookies later. Beat egg whites with finely-ground sugar and a touch o'vanilla, drop onto parchment paper on baking sheet, bake in slow oven until dried. Low-fat, if that matters after eating the pie.

Bourbon-chocolate pecan pie

I made this and took it to the christmas party for work (the boss can cook a meal...not a dessert)

they raved about it for 3 days; easy to make, and really delicious. the pecans can get too brown and easily burn, so once they "look" done i throw a piece of foil over the top while the pie finished to keep them from charring 🙂
