A dozen eggs w/ an exp date in 2 days.

I know someone will suggest I save them for Halloween and throw stinky eggs at people/houses/cars/etc... not happening.

If I boil them all up will they last another week? Or should I eat nothing but eggs for the next two days? I'd rather they not go to waste. Though I probably should have thought of that sooner (like when I bought them 2 weeks ago).

hard boil them. They'll last. It's actually better to use older eggs for hard boiling because then the shells will peel more easily....

Eat them all in one sitting. Get your cholesterol tested. Acted incredulously when you receive the results.

In all reality you probably have over a week of time to use those eggs without noticing any difference.

If you really want to get rid of them, get the g/f over and do some baking.

Just because they are dated does not mean they suddenly go bad right then. Depends entirely on how cold you can store them.
If you want to hard-boil them that might stretch their time. Do it this way: Put all the eggs (gently) into a big pot and fill with COLD water. Pot must be big enough so all the eggs are covered with some water to spare. Put it on the stove element on HIGH and just wait until the water actually comes to a full boil. Take them off right away - they do NOT need to boil for a while. At this point I usually put the pot in the sink and run cold water into it until the whole pot (and eggs) is cold again. That chills the cooked eggs quickly and they're ready to put back in the fridge. Don't confuse them with new raw eggs!

Eggs are fine for a couple weeks past the expiration date on the carton ... that date is the last date they can be sold by the store not the last day they can be eaten despite the wording on the date-stamp. Also they will last longer uncooked then cooked, so unless you have a craving for egg salad (yum!) I wouldn't bother boiling them all up at once.

rotten eggs are so gross.

cook 'em all up today and eat them over the next couple days. omlettes, egg salad, scambles eggs, etc.

2 Egg omlete for breakfast

My fridge is very cold, not so cold that water will freeze, just a little warmer than that. I frequently keep eggs 7-10 past the expiry date. I smell them before consumption. If they smell the least bit odd, out the go. 9 times out 10, they are fine.

Hard boil them.

Dye them orange and black.

Put them in a basket.

Go out for Halloween as the Halloween Bunny. :)
