I think the 7950GT SLI setup will be faster by a good margin in HL2/Source engine and Quake 4 because both those engines/games scale well with SLI (this is from memory, haven't looked at the benchmarks lately).
However, going forward, the 8800GTS will probably be better in most games and you won't have to deal with the pain of SLI/profile etc.
Regardless, a 640MB 8800GTS will give you frame rates over 100 in HL2 engine games at 1920x1200 with AA/AF on anyway, so it's not a big deal.
