Cast iron....best to cook with...but ya gotta take care of it (seasoning).

Good news is, you really can't hurt it..... so I'd suggest you get your cast iron cookware at garage sales, antique shops, or the local goodwill/salvation army stores. Unless cracked or broke, you can easily restore them to new condition with just steel wool.

8" is kind of small, I have the 10" one and I sometimes wish I had the 12". I bought a few pans from amazon at once, they didn't package it too well for the weight (I think it was total of 25 lb), the box had torn and the handles were sticking out. Nothing was damaged (kind of hard to damage a cast iron pan). You MUST get enough in the order to get the free shipping, cast iron is HEAVY so they will charge a lot for shipping otherwise.

Maintenance is very easy, just wash in hot water with a stiff brush, dry, then spray on a small amount of oil every few uses (manual says every time but I think that is overkill).
 
Yeah, definitely go with the 12" one, you'll never need to buy another pan. It's quite hefty though, so as said before, make sure you spend $25 to get the free shipping. I just bought a lid for mine too, it works great for nearly anything you want to make. Retains heat really well too.
 
Cast Iron is awesome. The key is all in the seasoning. I season it about 20 - 30 times before I actually use a new piece even if its preseasoned. Turn the oven on to 300 and let it go for 6 hours I usually buy them in the winter time that way I don't waste the AC in the summer time and it heats the house too. I love my Wagner and my Griswold.

Cast iron skillet is great for cooking steaks in the oven. Once you cook ribeye and strips using iron skillet you won't dare to ruin a good steak on the grill. Walmart also has these skillets real cheap.
 
Cast Iron is great to take camping as you can just scour them with sand & rinse 'em in the creek. (Crick, if you're from MN.) No need for soap or steel wool that way.
Cast Iron is a life-time investment and they work best on an open flame or in the oven or on a bed of coals.😀😀😀
 
I for the life of me cant get a good season on mine. I've been told to cook in shortening in an oven. All I get is an appartment that smells like burning seasononing and a verry lame rough cooking surface.

Any tips from seasoned pros?

We have almost every size (included one could deep fry a turkey). You got to work out before you get the 12" one, it is much heavier than 10". My favorite one is 10 1/4" dutch oven.

Rub on any kind of oil in-and-out, bake it at 300 degree for 30 mins. Wash it with hot water ONLY, no soap; you do need to towel dry it quick, it rust fast. Need to cook a few times to build a nice NO-Stick coat. By the way, avoid cooking too much tomato (acid food), it takes seasoning coat off, and food sometimes tastes funny.

Heheh... my outdoor grill has cast iron grates.....and they're seasoned. After each use I scrape the grill if necessary, then rub with a little vegetable shortening to coat. That's it.
