In general it's better to go with a single fast card than 2 midrange cards. It just makes things simpler, so you dont have to worry if a game really benefits from SLI or not, and dont have to deal with any issues you may encounter with dual cards. In particular, as was the case with dual 6600gt's, they may be competitive in shader-heavy pure-speed scenarios, but dont fare so well against a single high end card once AA+AF are enabled.

You can look at the benches here to get some idea how dual 7600gt's compare to s single x1800xt. I haven't found any other benches yet.

go with the 7900gt, no question. its gonna be about the same speed at higher res with mor eye candy, and it overclocks like a beast. (Mine is runnin at 625/1950 up from 450/1330 stock)
