5870 cf over 5830 3 way for sure as that will be less scaling problems.

That is a monster motherboard, cpu, psu setup, very very nice!

I'd go with 1 5870's and 1 5970 in crossfire. Spend a little ,don't be so cheap. :)
Thats the fastest, coolest solution, I don't think you will need more then that.

If not I'd pick 2 5870's in cf.

the fastest setup is the 5830 x3, but I would not touch that. If you have the cash get the 5870 xfire. but I would wait for opinions from people who have them. There are a few people here who have 5870/5850 xfire.

By the looks of his components he has the cash. :D
IMHO ,I don't think 3 5830's can beat 5870's in crossfire.

With that monster setup he should be aiming for a 5970 and 5870 in cf.
I just hope he dosen't have a 17 inch monitor?:)

I would go 3x5870 instead. that will be faster than 5970 + 5870 and will cost about the same.
