Philly, you using the PC probe that came with your motherboard? I got the same thing and my system would run stable muchhigher than that, even though i wasn't happy about it. I have an 800 by the way. I fixed my little problem by running with the case opened (dropped from above 60 c to 54 c) and then rigging a fan to blow right in between my AGP card and cpu (dropped from 54 c to 48 c). I'm much happier with it now. T'birds can take quite a bit of heat, i think that somethinglike 85 c is the max rated heat but i could be wrong, may be in the 70's or something but getting a reading in the 60's worried me. Don't listen to some people that say they got like a 30 c t'bird, that's not true, they have inaccurate thermsistor and you and i do too. Use that reading to compare to when you make changes to see if it was for the better orthe worse.
