Though others may disagree, I think 5.1 headphones are gimiky.
For the $60 - $80 it would cost for 5.1 headphones that sound OK, you could buy some grado or Sennheiser headphones that sound awesome.
Audiophiles claim that you are no better in FPS with 5.1 headphones than standard phones. That since you only have 2 ears, once you learn the position characteristics of your headphones they are just as acurate and sound better than 5.1s for the same price.

That said, THG was paid to like the Medusa 5.1 headphones Here more than 2.1 headphones.

Tom's didn't seem too impressed with the Sennheiser headphones. Not that it means anything. I always here good things about Sennheiser.

For gaming, with some movies and music, I prefer the SteelSound 5H headset. I had Sennheiser PC150 but while the sound was clear, it was also a bit flat. It simply lacked punch.

As for 5.1 headsets, the SpeedLink Medusa seems to get good reviews, although I think that 5.1 headphone sound is not much more than marketing, since it won't substitute a true 5.1 speaker system.
