When I eventually upgrade to Vista I'll be getting another 2GB of RAM for sure. I was shocked to see I was using 1.6-1.8GB of RAM in XP running Dark Messiah @ 1920 with max'd texture settings and 4x AA. I think Vista adds a few hundred MB of overhead and also has super fetch so 2GB probably won't cut it even for gaming.

VMWare will use as much memory as you can throw it. To figure out how much memory you need for it, just add up all of the memory requirements for all the virtual machines you want running at once and add at least 512 MB for the host OS and virtualization overhead.

I went away and bought another 2Gb(2x1) of OCZ XTC 6400 to compliment the 2GB already in the system when I upgraded to Vista...but for some reason the P5B board(1102bios) doesn't seem to like them(pc won't boot up).
Can anyone tell me why this is happening?

Definitely!

I just went to 8GB and it made a difference. Of course you have to use it to appreciate it. You wouldn't rent a dump truck to return 5 library books.

What does your rig looks like? I heard many people having trouble with motherboard when upgrading to more than 4GB. Would like to see which MB and memory combination you are using.

32-bit Vista can still only address 3.2GB of RAM.
My install of 64-bit Vista is loving the 4GB of RAM I put at its disposal. Superfetch actually does work in games (the last 40% of a load in BF2 is instantaneous).
