why would you get 1600mhz only on ram for a 4k computer? And if you're overclocking, wouldn't a 2500k be better?

Because various tests don't show any noticeable difference between 1600 ram and those with higher speeds. And why pay extra for something you don't need. It's not like I've got money to burn.
I don't know what would speak for the 2500k, except for the lower price tag?

It's a small family owned business, and I am thankful for their generosity. I don't want to overdo it.

If you want to do 4k go ahead, it's your money. But I think the prevailing theme here is that it's wiser to spend 2k on two builds instead of one 4k build that could be obsolete in only 3 years.
