3 or more monitors extended desktop Widnows 7

I'd like to build a replacement computer for business, NOT gaming use, with 3 or more monitors displaying an extended desktop. If I use a motherboard like ASRock H67M-GE/HT with onboard video provided by Intel Core i5 2500K LGA1155, can I install an Eyefinity video card and extend the desktop from the two monitors supported by the motherboard onto additional monitors driven by the card? If not, must I use two Eyefinity cards and should I buy a version of the Core i5 that has the onboard graphics disabled? Is it possible to use a variety of DVI and hdmi monitors without any Displayport monitors or is extension beyond two monitors impossible without using Displayport? Is it true that wired Displayport to hdmi adapter cables really don't do the job? Any exceptions?
It's remarkable how little information seems to exist for users who desire to run multiple monitors who are NOT gamers. Sorry to ask so many questions in my first post but I did research with due diligence first and simply couldn't find the answers I seek.

I may be wrong here but I believe Sandy Bridge chipsets don't give you the option to keep onboard enabled with discrete enabled at the same time, it's an either or option. AMD chipsets do allow you to keep the onboard enabled with an active video card and the BIOS option is called SurroundView.

So if you want to avoid using DisplayPort you will need 2 cheap video cards (each supporting 2 monitors).

I think the 5770 flex edition may be even better for 130$.
