2003 to 2008 Active Directory Restructure

I'm looking at restructuring our current 2003 domain with Exchange 2007 to a 2008 domain with Exchange 2007 as we need to change our domain name during this upgrade.

I have found some documentation on transitioning 2003 to 2008 but can't seem to find anything on restructuring 2003 to 2008.

Looking for something like this but on a domain restructure

I'm not AD expert by any means but if you're changing domain names it's probably easiest to setup the new domain beside the old one and migrate everything that way.

That's what we are doing but I guess I'm looking for more detailed information like how to handle Exchange in Domain Restructure. Is a cross forest mailbox move for Exchange the only solution? What order should I migrate users and mailboxes?
