2 sticks better than 1?

Just curious, when buying RAM, is it better to buy 2 sticks instead of 1? (ex. 512(x2) or 1024(x1) ).

Or do they have different advantages,like maybe having 2 sticks make it easier to overclock (Im not saying thats true or anything).
 
If the two sticks are in Dual-Channel (only possible with pairs, not with single sticks), you'll see a slight performance imporvement, I think its something like 5-10%, but don't quote me.
