If I wanna game on a 30" Dell at native resolution, which solution will be better?
Two 570s or One 590?

Depends, we don't even know what the "GTX590" even looks like.
To show I can be open minded, what about that new 6990?
You're better off just getting another 570 in SLi.To show I can be open minded, what about that new 6990?

If GTX590 has 2x GTX580 chips then it would be a better choice than GTX570 SLI due to higher memory bandwidth, more ROPs and more memory buffer.
If you can afford it then wait for a couple of weeks for the GTX590 to be released.
the 570 sli comes up short because of only 1280mb framebuffer. if op wants 30" dell and wants to run 1600p then the 590 will be the better choice.
the ati 2gb cards or the 3gb 580 is what 1600p gamers should be looking at.
