1x 40gb or 2x 20gb? e.g

What will the drives be used for? If you need maximum performance but don't need the space, the 20gb drives in RAID 0 would be best. If you need more than 20gb's, then go with the 40gb drive. Heck, you could hook up all three I guess. Why don't you just do that?
 
2 x 20GB

That way you can put your page file on the secondary hard drive for improved performance.
