I've had a minimum of 1.5GB of RAM for the past 4 years, and games like Quake 4 or Far Cry require more than 1GB.

I would add another 1GB - you might discover that your game runs much better!

Spring for it, waste of cash to run a 8800GT with 1GB Ram, 1GB just won't be able to feed the thing. And yes UT2003 can eat the memory on large maps, such as Strangelove and AirPower mutates maps.

More memory can never hurt. If you're running XP I recommend 2GB and for Vista go to 4GB. Vista will always make use of your memory.

Vista doesn't have much to do with using 4 gb of memory. You just need a 64 bit OS :). I'd go for 2 GB if you can afford it AFG34. In interviews, Jeff Morris has said that more RAM (system or video) will make UT3 perform better.
